Strawberry Peach crisp

Strawberry Peach crisp dairy free

Here's my first attempt of writing and sharing pictures on the blog.  This is a dairy free Strawberry Peach crisp.  For my first attempt I used 1/2 a cup of organic cold pressed coconut oil and it was definitely too much and the same with honey. I used 1/4 cup walnut halves or large pieces and I'd go 1/3 cup each instead.  Also, I didn't have quite enough strawberries fresh so I used some that I had picked and canned in simple syrup myself a few weeks ago and they worked great.
Ingredients:
2 cups fresh peaches
1 cup fresh strawberries
1 cup gluten free sesame waffle mix from Country Life Foods (but could use flour)
1 cup whole uncooked oatmeal
1 cup brown sugar (used white sugar blended in food processor with molasses, very dark)
1/3 cup honey
1/3 cup coconut oil (could use butter or margarine)
1/3 cup walnuts

Spray 8" square glass pan with coconut oil cooking spray. Mix together oats, flour or waffle mix, and brown sugar.  Mix in coconut oil or butter/margarine until crumbly.  Add nuts.  In separate bowl mix fruit and honey.  Put 1/2 dry mixture in pan, add fruit, top with remaining dry mix.
Cook 350 degrees for 40-45 min.

Opening Description

The Love of Life is Learning
So many times friends ask for links or lessons from our homeschooling and I sporadically remember to send them our plans and I share pictures on facebook, but I've had enough friends ask for ideas that I wanted to have a central place for sharing some of the things we do.  Some of it might be homeschooling, we really might be called "unschoolers" at times because we just live loving learning.  Follow if you want to see some of the more share-able ideas.  I'm definitely not a writer, so be kind and don't focus on that!  Feel free to comment and add ideas or tips!
